2.5cupskale, wash the kale, remove the stems, and chop small, pack into the measuring cup
4cupschicken broth, low sodium
1chicken bouillon cube, for extra flavor
salt and pepper, to taste

grated parmesan cheese
red pepper flakes
fresh chopped Italian parsley

1 can opener
Instructions
In a large soup pot over medium heat, add the olive oil. Saute the sweet onions, celery and garlic until tender. Season with salt and black pepper.
Once the onions are translucent and the garlic is fragrant, add the chicken broth and optional bouillon cube. Stir well.
Next, you'll add the white beans and prepared kale. Simmer over medium low heat. Taste for seasoning, and top with grated parmesan, red pepper flakes and parsley.
